APPLE AND ROSEMARY CAKE

Ingredients

    This apple and rosemary cake is quite delicious and very easy to prepare.

    - 3 large apples, peeled and cored
    - 1 cup of whole wheat pastry flour
    - 1 teaspoon of baking powder
    - ¼ teaspoon of sea salt
    - 1 teaspoon of TERANA Rosemary
    - 3 large eggs, at room temperature
    - ½ cup of cane sugar
    - 6 tablespoons of butter, melted
    - 1 tablespoon of vanilla extract
    - 1 teaspoon of lemon zest

Directions:

1. Preheat the oven to 680°F. Butter and flour a 9-inch pan. Set aside.
2. Slice the apples very thinly. Set aside.
3. In a medium bowl, mix the flour, baking powder, salt, and dried TERANA Rosemary.
4. In another large bowl, put the eggs, sugar, butter, vanilla, and lemon zest. Mix well. Stir in the flour mixture with a wooden spoon until it is well integrated.
5. Add the apples to the dough and mix until the apples are completely covered. There will be much less dough than apples.
6. Pour the mixture into the baking pan and bake for 50 to 60 minutes, or until the top is golden brown and the cake is cooked through.
7. Let it cool for 15 minutes in the pan; then turn it out and let it cool on a rack for at least 30 minutes more. Cut and serve.
