ACAPULCO STYLE MARINADE

Ingredients

    Make the most of TERANA's delicious dried chilies and prepare an Acapulco-style adobo that you can spread on chicken, pork, or beef.

    + 4 guajillo chilies
    + 2 ancho chilies
    + 0.7 oz of TERANA ground chipotle
    + 1 tbsp of butter
    + 1/4 onion
    + 4 cloves of garlic
    + Protein of choice (chicken, pork, beef)
    + 0.5 oz of chopped parsley
    + Salt and pepper

Directions:

1. First, clean out and remove the seeds from the chilies.
2. Boil the chilies in water for 30 minutes to soften them.
3. Add the chilies, butter, onion, and garlic to a blender.
4. Blend until smooth. There should not be any large pieces left in the mixture.
5. Reserve.
6. Season the protein and marinate it in the adobo mixture.
7. Refrigerate for 30 minutes.
8. Cook on a hot griddle with some oil until the marinade has browned a little and serve.
