AVOCADO STUFFED WITH CAJUN QUINOA

Ingredients

Healthy recipe with TERANA Cajun Style Seasoning: Avocado Stuffed with Cajun Quinoa

 

+ 2 ripe avocados

+ 1 cup of cooked quinoa

+ 1 tomato, chopped

+ 1/2 cup of cooked corn

+ 1/4 cup of red onion, chopped

+ 1/4 cup of fresh cilantro, chopped

+ 1 tablespoon of  lemon juice

+ 1 teaspoon of TERANA Cajun Seasoning

+ Salt and pepper to taste

 

Directions:

1. 1. Preparing the avocados: Cut the avocados in half and remove the pits. Scoop out some of the flesh with a teaspoon to make room for the filling.

2. Quinoa filling: Mix the cooked quinoa, tomato, corn, red onion, and cilantro in a bowl.

3. Seasoning with TERANA: Add lemon juice and the cajun mixture to the bowl. Stir until all the ingredients are well seasoned.

4. Stuffing the avocados: Fill each avocado half with the quinoa mixture, lightly pressing it into the avocado.

5. Finishing touch: Sprinkle a little more cajun seasoning on top of each stuffed avocado for a final touch of flavor.

6. Serve your stuffed avocados as a healthy and delicious starter.
