MINI MARINATED TOFU SKEWERS

Ingredients

World Vegan Day celebrates veganism as a way of life because increasingly more people are deciding to eliminate the consumption of animal products from their diet.

 

At TERANA we want to share an easy and delicious vegan recipe: Mini Marinated Tofu Skewers.

 

For the tofu:

- 1 oz of extra-firm tofu

- 2 tablespoons of soy sauce

- 1 tablespoon of sesame oil

- 1 tablespoon of lemon juice

- 1 teaspoon of grated ginger

- 1/2 teaspoon of TERANA Garlic Powder

- 1/4 teaspoon of TERANA Ground Black Pepper

- 1/2 teaspoon of TERANA Ground Cayenne Pepper Mixture

 

For serving:

- Bamboo sticks

- Vegetables to accompany (peppers, onion, mushrooms)

- Peanut sauce (homemade or purchased)

Directions:

1. For the marinade, mix all the ingredients, except the tofu, in a bowl until you get a smooth paste.

2. Cut the tofu into bite-sized cubes and add them to the marinade. Stir well until all the cubes are coated with the mixture.

3. To marinate the tofu, cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or preferably overnight so the flavors intensify.

4. Meanwhile, soak the bamboo sticks in water so they don't burn while cooking. Skewer the marinated tofu cubes alternating them with the vegetables of your choice.

5. Heat a grill or nonstick skillet over medium-high heat. Cook the skewers for 2-3 minutes on each side until the tofu is golden brown and hot.

 

Serve the skewers hot accompanied by the peanut sauce.
