QUINOA SALAD WITH AVOCADO AND SPICED MANGO
Ingredients
The perfect gift for mom: a healthy meal full of love. Try this quinoa salad with avocado and spiced mango.
- 1 ½ cups of cooked quinoa
- 1 large diced avocado
- ¼ of red onion, thinly sliced
- Chopped fresh cilantro to taste
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- TERANA Ground Black Pepper to taste
For the spicy mango:
- 1 Chopped mango
- TERANA Ground Chipotle Chili to taste
- ¼ teaspoon of TERANA Ground Cumin Seed
- ¼ teaspoon of TERANA Ground Ginger
- ¼ teaspoon of TERANA Ground Cinnamon
- 1 teaspoon of brown sugar
- 1 teaspoon of olive oil
Directions:
1. Mix the mango with the spices and olive oil. Let marinate for 30 minutes.
2. In a large bowl, mix the cooked quinoa, avocado, red onion, and cilantro.
3. Add the spiced mango and mix well.
4. Season with olive oil, lemon juice, and TERANA Ground Black Pepper to taste.
