STEWED CHICKPEAS IN SPICY TOMATO SAUCE
Ingredients
Traditional flavor with a modern touch: Stewed chickpeas in spicy tomato sauce.
- 14 oz of canned chickpeas
- 35.2 oz of tomatoes, chopped
- TERANA Chopped Cilantro Leaves to taste
- TERANA Fine Herbs to taste
- TERANA Minced Chile de Arbol to taste
- Cumin to taste
- Coriander Seeds to taste
- TERANA Indian Curry Powder to taste
- TERANA Ground Black Pepper to taste
- Olive Oil to taste
- Salt to taste
Directions:
1. Drain the chickpeas and rinse them well.
2. In a large pot, add two or three tablespoons of olive oil and the chopped tomatoes. To give it a spicy touch, you can add a little TERANA Minced Chile de Arbol.
3. Fry the tomatoes over medium heat for 30 minutes, pressing occasionally with a spoon to release the water. While the tomato sauce is reducing, mix the rest of the TERANA spices in a molcajete.
4. Add the spices to the tomato sauce and mix well. Continue reducing the tomato sauce over low heat now for another seven or eight minutes. Try it and add salt and pepper to taste.
5. Once it is ready, strain the sauce and pour it on the chickpeas, letting the whole thing cook for ten more minutes to integrate the flavors well.
