TANGY CHILE-LIME CHICKEN TACOS

Ingredients

These quick and easy Chile-Lime chicken tacos made with a flavorful marinade are the perfect choice for any weeknight dinner!

 

+ 1 lb of boneless and skinless chicken thighs

+ 8 corn tortillas

+ 1 cup of pico de gallo, homemade or store-bought

+ 1 cup of guacamole

+ TERANA chile and lime salt

+ ¼ cup of olive oil

+ 1 tbsp of TERANA ground chipotle

+ 1 tbsp of TERANA guacamole seasoning mix

+ 1 tsp of smoked paprika

+ 1 tsp of cumin

+ ¼ tsp of red pepper flakes

+ 1 tsp of kosher salt

+ Black pepper to taste

+ Zest of one lime

+ 1/4 cup of fresh lime juice, about 1 large lime

+ 4 garlic cloves, minced

Directions:

1. Whisk all the ingredients together, except for the chicken thighs, the tortillas, the pico de gallo, and the guacamole. Add the chicken thighs to this marinade and toss around to make sure that each piece is completely coated. Marinate for 30 minutes in the refrigerator.

2. When the chicken is ready to be baked, preheat the oven to 425 degrees (ºF). Line a baking sheet with aluminum foil and place the chicken thighs on it.

3. Bake chicken for about 20 minutes, until it is cooked through. Then, place under the broiler for 1-2 minutes to char the edges (optional).

4. Remove chicken and allow it to rest for at least 5 minutes, then slice.

5. Serve the chicken with tortillas, pico de gallo, guacamole, or any other of your favorite taco toppings!
