TORTILLA SOUP
Ingredients
🥣 Would you like to enjoy a classic of Mexican cuisine? This tortilla soup, full of flavor and tradition, is perfect for any occasion. A comforting and delicious dish! 🌶️
Ingredients:
- 4 tomatoes
- 5.3 oz of onion
- 1 clove of garlic
- 1 chipotle chile in adobo or 1 pasilla chile
- 6.3 cups of water or chicken broth
- Olive oil or seed oil for frying
- 1 teaspoon TERANA chopped epazote
- TERANA ground black pepper and salt (to taste)
- 1 avocado
- 3.5 oz of mozzarella cheese
- 4 corn tortillas
- Finely chopped fresh coriander
Directions:
1. Roast the tomatoes, garlic and onion in a skillet until cooked through. It is best to use a non-stick pan without any oil, turn them over and lightly toast them on all sides. Reserve.
2. When you have them ready, put them in the blender and add the water, garlic, black pepper and salt, blend everything well.
3. In a pot, pour the oil and pour the product from the blender. Bring to a boil, add the chipotle pepper and water, then let it sit over low heat for 12 minutes. Add a teaspoon of epazote. Stir well and bring to a boil for 1 more minute.
4. Meanwhile, cut the corn tortillas into julienne strips and put them in a pan over low heat so that they brown and crisp, also cut the cheese and avocado.
5. Pour a good handful of fried tortilla strips on each plate. Then serve the soup, enough to soak all the tortilla strips. Place a few more on top, with the cheese, avocado and some finely chopped fresh cilantro.
A delicious soup to eat as a first course at any Mexican celebration.
