TRADITIONAL MEXICAN ESQUITES
Ingredients
🌽 Make some delicious esquites in authentic Mexican style! Tender corn, chili, lime, and all the ingredients you love. 🍋
For 2 people.
Ingredients:
- 3 fresh white corn kernels
- Chopped chicken or chicken bones (wings are great because they release a lot of flavor and don't have too much meat) You will only use the bones to add flavor to the cooking of the corn (optional).
- 1/2 tablespoon TERANA chopped epazote
- Semi-cured goat cheese or grated fresh cheese to taste, they are also delicious with crumbled feta cheese.
- Mayonnaise to taste (if it's homemade, much better!)
- Lime or lemon to taste
- TERANA ground chipotle or TERANA minced chile de arbol to taste
- Salt to taste
Directions:
1. Clean your corn kernels, for this you must remove the leaves and cut off the ends.
2. With a sharp knife, shell the corn flush and pour it into a pot of boiling water.
3. Repeat the operation with all the corn kernels, add the chicken or its bones to the water (if you have decided to do so, remember that it is optional), the epazote and the salt.
4. Let the grains boil for about 30 minutes. The time is approximate, it will depend on the kernel. They can even stay 1 hour and a half. Be patient and wait until they are soft. Don't forget to clean the broth with a slotted spoon, remember that we have put the chicken in.
5. Taste them, when they are tender turn off the heat and serve in a bowl.
6. Finally add a splash of the broth, a few drops of lemon, a little mayonnaise, cheese and chili powder or minced to taste.
